Countdown to Halloween

Well, it's official, I am ready for fall! How 'bout you? I decided it was time to do some baking with pumpkin and gave a new recipe a try... It is delicious! In fact I'm enjoying a slice while typing this blog!

What's so delicious you ask?? Well, this cake:

Pumpkin Streusel Cake

Heat oven to 350* & grease a 12-cup bundt pan with shortening; lightly flour.

In a small bowl, stir the follow together until crumbly:
1/2 cup packed brown sugar, 2 TBSP flour, 1 tsp ground cinnamon, 1/4 tsp pumpkin pie spice, 1 TBSP butter, softened

In a medium size bowl, combine the following:
3 cups flour, 2 tsp baking soda, 1 TBSP ground cinnamon, 1 tsp salt

In a large bowl, beat 1 cup softened butter and 2 cups granulated sugar with electrix mixer on medium until creamy. Add 4 eggs (2 at a time), beating well after each. Beat in 1 cup canned pumpkin, 1 cup sour cream and 1 tsp vanilla.

Gradually beat flour mix into pumpkin mix on low speed just until blended.

Spread 1/2 of the batter into pan. Sprinkle steusel over batter, making sure it does not touch sides of pan. Top with remaining batter.

Bake for about 1 hour or until toothpick comes out clean. Cool 30 minutes in pan, then remove to cooling rack. When completely cool (about 2-3 hours) sprinkle with powdered sugar.
It's also time to get started on Ellie's Halloween costume. We took a trip to JoAnne's and bought the necessary supplies, now I just have to get sewing! Check back to see what kind of magic we can create with the pile of 'stuff' in the photo! Spooky or Cutie?? Have to wait and see!

My neice is so darn CUTE...I love this picture of her! Fall is definitely here and I love it! I did a great meatloaf recipe in one of our "homegrown" pumpkins...it was fun! I'll have to try this Pumpkin Streusel recipe- I love pumpkin desserts :)~
